Is a blast chiller a legal requirement in the UK?
UK food safety regulations stipulate that food must be cooled from 70°C to 3°C within 90 minutes to prevent bacterial growth. While the rapid cooling of food is a legal requirement to ensure safety, the use of a blast chiller is not explicitly mandated. However, due to their efficiency and quick cooling times for large batches of food, they are a common appliance in busy commercial kitchens.
