When it comes to consistently producing high quality ice, Hoshizaki are industry leaders. In this video Max from Hoshizaki walks Tim (Eco) through the process of how their IM machines produce ice and how it varies to every other manufacturer, making their machines unique.

All of the IM models produce ice in exactly the same way. Using a closed cell system, each cube is made with an individual jet spray. This makes sure each cube is consistent and keeps airborne bacteria away.

Making ice in this way gives you a harder, clearer cube meaning it takes longer to melt and protects the integrity of the beverage being served. This production technique is unique to Hoshizaki.
