As most readers will know the last 10 years have seen an upsurge in property prices across the country, but most people won’t have thought about the effect this has had on new restaurant premises and the ever decreasing footprint of the commercial kitchen.

With limited kitchen space being an ever more common problem, refrigeration manufacturers have had to work on keeping capacity whilst reducing machine dimensions or adding versatility.

Liebherr have produced the GKV 4360 as a slim line addition to their range. At only 600mm wide x 680mm deep x 1900mm high this unit still boasts a storage capacity of 434 litres gross. Foster Refrigerator have produced the FSL400 as a slim line cabinet in fridge, freezer and meat chill options. The Foster unit is 600mm wide x 705mm deep x 1900 high with a storage capacity of 400 litres gross.

An increasing number of commercial kitchens looking for more versatility are switching to fridge or freezers counters and drawers. The counter units allow what would normally be wasted space to be utilised for storage whilst keeping ingredients close at hand in the preparation area.

Meanwhile Adande offer the VCS2/CT,  this 2 drawer unit fits under an existing worktop and has storage equivalent to a 500 litre upright cabinet. The really clever thing about these drawers is that they are dual temperature so can be used as either a refrigerator or freezer option allowing complete storage versatility.
