What is the difference between a blast freezer and a blast chiller?

The biggest difference between a blast chiller and a blast freezer is the temperature range and the length of time. A blast freezer hits a very low temperature to halt all organic processes and bacterial growth, whereas blast chilling simply cools food to a safe temperature.

Can you put hot food in a blast chiller?
